I've been canning chicken in Preston the last few years with my friends and I decided to take photos this year so that my family can see what we actually do there. First, I spent a week thawing out my 40 pound box of chicken and cutting it up into smaller pieces to fit in the cans. This was kitty the day I cut up all the chicken.
The cannery is open during the fall months and we usually get an appointment early in the morning, which means we leave at first light and work all morning. Good thing I have friends to share the day with!
After the chicken is placed in our cans, it is cooked in a water bath. After it is cooked through, we take it out of the bath, and put lids on. The cans are then put into the pressure cookers to seal. During this time, we usually go out to eat and sometimes visit the cute Preston quilt store.
After the cans have sealed, we take them out of the giant baskets and take them home. Sometimes we unload other people's cans and stack them on these shelves. It is a good, full day's work, and we love the finished product! Yummy!
